Pandesal is a Filipino bread most known for all of time. The name Pan de sal comes from the spanish literally means bread of salt. Pandesal has a slight sweet taste. My family loves to eat pandesal all through out the day. In the Philippines you can simply dip in a hot coffee or hot chocolate or fill anything that you desire, jams , peanut butter , nutella, margarine, cheese and even sardines … anything that you want, I myself love pandesal with foie gras sounds odd but I love it ! ( French would hate seeing me eating foie gras with slight sweet bread ).

Thanks to my kitchen-aid Kenwood, baking is a lot easier and quicker.

Ingredients :

• 3 cups bread flour
• 1 and 1/2 cups all purpose flour
• 1/2 cups white sugar
• 1 pouch yeast
• 3 egg yolks
• 3/4 cup milk
• 1/2 cup melted butter
• 1/2 cup water
• extra flour for kneading

Directions how to bake pandesal with mixer/kneader :

• Dissolve yeast and 1 tsp sugar stir to dissolves and let stand for 10 minutes.
• Place all the dried ingredients including yeast into a bowl and mix until all ingredients are well combined. Continue mixing until it formed dough.
• Remove the dough and transfer to oiled bowl and cover with damp cloth and let it rise for 1 hour.
• Devide the dough and rolled and cut each log into equal oval pieces.
• Lightly greased each bread and coat with bread crumbs.
• Place each bread flat side down in a baking tray
• preheat the oven 180 degrees for 30 minutes.
• Bake for 20 minutes
• Serve hot or cold and Bon àppetit !

If you plan to keep the pandesal longer. You can freeze all them up and take it out whenever you want and simply toast them in a toaster or heat them up inside the oven.

It wasn’t in my plan going home during rainy seasons in the Philippines. But I bugged out home for my health issues. Spent 3 weeks, in and out in the hospital. In my head I already had planned going in Vigan, Ilocos sur.

It was then Wednesday morning, Woke up at 7 am and we were excited. My mom was happy when we told her that we were going to bring her in Vigan. Vigan is located on the western coast island of Luzon. Vigan street has a unique architecture it is one of surviving Philippine historic cities, dating back to the 16th century.

We left around 7 o’clock in the morning. The road is long and quiet pretty far. While on our way, we paused by to have our breakfast at Leeza’s Restaurant they have the best filipino buffet, cheap price, they won’t let you down because the food is delicious, well presented buffet and spacious place. Toilet and washroom are clean.

It was lunch when we reached the town of Vigan. It took us 5 hrs drive from Baguio … we were dehydrated and starving. People offered us to eat ( Sinanglao ) It is a famous dish Vigan delicacy, It is a soup dish and has a bit sour taste and a hint of bitterness nearly similar to (Pinapaitan.)Don’t be confused with the two , sinanglao is cooked with meat beef and pinapaitan is meat goat.

The weather condition was so hot and sunny … which made us feel uncomfortable. Kids outrun in mc donalds and bought sundae ice cream.

After we had taken our lunch, We straightly quitted to the hotel to drop by all our things lugguge and snatched some minutes of nap.

We then commenced our walk, took pictures everywhere, every corner … We had seen so many things , souvenir shops , Kalesa ~ it’s a horse drawn calash ,it was introduced by spanish colonizer during 18th century. You will rarely see now a days and only used in the streets tourist areas of old cities and in some rural areas. There are several ice cream man, you must at least try their sorbetes it is creamy and tasty. Buildings are well preserved. The street is almost empty, I guess 500 meters long and 3 – 4 blocks. There are less visitors during week days. People are well mannered and friendly. After An hours , we headed to Baluarte to see their famous zoo and museum.

Back to Vigan,  the night is young and we are free hahaha joke ! Someone told us that there are two light show and we went off and watched the dancing fountain show apparently scheduled every night at 7:30 pm lasting 30 minutes each show.

The next day, the sky is clear and blue what a perfect day for us… Before anything else, my parents bought Bagnet ~ I have no idea what it is ? Bagnet ~ it is actually deep fried pork belly ( lechon kawali in Tagalog ) I am not actually fun of it, seeing bagnet I felt I would have heart attack. Instead, I bought salty longganisa garlic flavored ( longganisa is a popular sausage in the Philippines traditionally made from grounded meat and it has a several flavors. ) Don’t forget to bring cooler box with you, there are ice cube seller nearby if you want to buy some fresh meat. We then visited Bantay watchtower & St Augustine church. Inside the Bantay tower there is a man , he offered us to take some beautiful photos and he is indeed good in photography. I think he is one of the care-taker of the Bell tower He shared the story of the place and we then happily left and gave him some extra tip in return. And of course don’t miss RG Jar factory ~ Pot shop where they briefly shown us on how pots are made. We came to see and bought souvenirs in Marsha’s delicacies shop – a great shop when buying gifts. My brother bought some royal bibingka they said you shouldn’t miss out buying royal bibingka when visiting Vigan. ( bibingka is a type of rice cake. ) Time has come to end our visit , as we were driving back home , we intentionally then stopped in Nuestra Senora de la Asuncion Church and as usual took some pictures… We honestly missed some other places like the old house of the late President Marcos and many more … but sadly we runned out of time… but we happily managed to captured some beautiful views along the sea and before we knew it we were back home safely.

IMG_7295I am very careful in everything I think, I do and say. Practice is a lifetime learning, I practiced and still practicing to talk less but I do observe enormously But of course I still know when to open my mouth….. especially to other’s people children. You know, It’s takes a village to discipline other’s children. Kids are growing and changing, their body and mind. I believe that childrens are children and I let them live freely. I am a person who doesn’t give opinions unless asked for. I think millions times before reacting into such thing or jumping in a conclusion and it doesn’t mean I am jumping away. We can control ourselves and may appear cool, nice, and pleasant in a normal situation, but when facing an uncalled situation, with a situation that caught us by surprise and how we reacted at the moment, I do believe personally, in my own opinion, that is our real self , our real character, who we really are inside. I am far from perfection but I don’t need to like everyone and I don’t need to be liked by everyone. And I hate to admit that I don’t like all people, So why would I love all childrens ? Let me tell you, One day, I am surprised about my son reaction when he faced such uncalled situation on how he reacted smoothly and how to defended his self with an Adult person. My son is a grown up person and I am proud of him , though he’s grown up I still believe that he still need my guidance. I understand my son, he really choose his friends. and I can’t do anything about it. Even some parents are begging to get some get-together. There were years I exposed my kids with different and mix people. And now they are wise enough to choose whatever atmosphere they want. I really do have to choose people, people who lift each other up , inspires each other , people that I know that are compassionates, kind and humble. People who make you feel loved. I am not a fixer or saviour. I would rather help than judging. I do believe that everything starts at home. There will always be an Up’s and down. As much as I can, I prioritize healthy relationship with my children. So when you think that something is going wrong, never expect any comments from me. It takes truth investigation before you get my help, comments and automatically Immature situation will be IGNORED. As a mother there are days that I know everything and there are days I know nothing. There is nothing wrong when you mind your own bussiness. Minding your own bussiness doesn’t mean you’re uncaring person.

The reason

I truly believe, I found someone who completed and turned my world around. I tell him things that I have never shared with anyone and We share hopes for the future.I have many dreams that never come true, goals that were never achieved and many disappointments that life has thrown me. When something wonderful happens, I can’t wait to tell him about it. I cry with him when I am hurting or laugh when I make myself a fool. He never hurt my feelings or make me feel like I am not good enough, but rather He help me build myself up and show me the things about myself that make me feel so special and even beautiful. There is never any pressure. I can be myself and not worry about what he will think of me because he loves me for who I am. I open my heart knowing that there’s a chance it may be broken one day and in opening my heart, I experience the true love and real joy that I never dreamed possible. And I find strength in knowing I have a husband and a soul mate who will remain loyal till the end. Life seems completely different, exciting and worthwhile. He is the reason of my existence. He saved me from the fall. I am truly blessed that God has given me so much more than I deserve.
